Too Busy to Cook? Easy Crock Pot Comfort Meal- Beef with Roasted Veggies

Sometime I even surprise myself. This impromptu meal deserved a photo and a blog post! And perfect comfort food for our rainy, cooler weather recently.  This is a high protein, nutrient dense meal that warms the soul and is easy to digest. Minimal spices and basic herbs allow the natural beef flavoring to come through. I prefer spicy but this time I went almost au naturel! All ingredients for the most part are organic. Keeping it clean means less collateral damage in your system to clean up later!

1.5 lb organic grass fed beef (stewed beef already chopped)
1.5 c fingerling potatoes,
1 large onion chopped
1 small to medium squash (chopped) of your choosing (I cant remember which one I used but it was a funky shaped yellow one)
2 c organic baby carrots
1 garlic bulb peeled and cloves separated
2 c broccoli florets
4 sprigs of rosemary
1 handful of sage leaves
1/2 c organic chicken of vegetable broth
salt, pepper, herbs de provence
1 tsp cloves
and I added a dash of dark chili powder

Beef should be marinating in olive oil and salt and pepper in fridge for at least a couple of hours. Toss all the veggies with garlic cloves, sage leaves and 2 of the rosemary sprigs in olive oil. Spread on a cookie sheet and roast at 400 degrees for 15-20 minutes. Place the beef at bottom of your slow cooker. Add the broth and turn on the cooker. Sprinkle the herbs de provence and chili powder, cloves and give it a stir. Once roasting is done, set veggies aside. After the beef has been cooking for an hour, add all the roasted ingredients. Lay the other two rosemary sprigs on top and add a little more broth if necessary or if you prefer a more soupy dish! Remember, the natural juices released from the beef will add to the dish. I set my cooker for a 6 hour period then Voila! Easy, comfort food waiting for me when I was done with work.
