I’ll never forget this delicious brown bag fish entree near the pier in Santa Monica- all ingredients fresh from the Farmer’s Market that day!

Protein Appetizers and Other Quick Bites
Keep your blood sugar regulated and your appetite satisfied with these yummy treats!
Honey Mustard Curried Meatballs
(gluten free)
These are my favorite appetizers I like to serve for guests or just keep in my freezer and thaw for occasional snacking! This recipe is found in a Fat Free Cookbook I purchased a long time ago when I was a chiropractic student. This one is Dr. Melanie modified- I added the fat by using a whole egg, some olive oil and not completely lean meat (80% lean is good). Also sneak in some greens -spinach or kale for those fussy ones. Click here for full recipe!
Crispy Lemon Kale Chips
The healthy chip! Season it just right and you won’t know you’re eating crispy veggies!
Ingredients:
2 bunches of of organic kale, rinsed and dried and cut into bite size pieces
Olive oil
Unrefined sea salt (I use Real Salt)
1 lemon
crushed red pepper flakes or a dry herbal season blend
Directions:
Preheat oven to 350 degrees F.
Place kale in a large bowl and dress very lightly with the olive oil to barely coat the leaves. Sprinkle with salt. Spread leaves on a cookie sheet so they are not stacked. Roast in oven for 12 to 15 minutes until crispy but still green in color. Remove from oven and dress with a squeeze of lemon juice and the dry seasoning.

Once I plated it, I was quite pleased with my mouth watering work of art. Your piece of meat should be an inch in a half thick (he recommended rib eye, I had organic grass fed NY sirloin on hand), Bring it to room temperature first by allowing it to sit for one hour before cooking . Sometime I even surprise myself. This impromptu meal deserved a photo and a blog post! And perfect comfort food for our rainy, cooler weather recently.
